Description

Melegueta pepper (also known as grain of paradise or alligator pepper) from Ghana comes from the ginger family and has been widely used in Europe as a substitute for black pepper since the 13th century. They have a distinct cardamom-fruit aroma and are milder than black pepper.
They are widely used to flavour ginger biscuits, breads and cakes. Chefs use these peppers as a secret ingredient in lamb and game dishes.
